Original Tiramisu Recipe

If you think of tiramisu (which translates pick me up in Italian), and how popular it is all over the world, you may be led to believe that it is a traditional recipe that goes back decades, probably centuries in the tradition of Italian cuisine. You will be surprised to know that the original recipe was actually born in the seventies, in the city of Treviso not far from Venice. The exact history of tiramisu is still to be written, but the most important thing is that this deliciuos Italian dessert is not at all hard to make at home. Here you have the recipe for the original tiramisu.

Ingredients for eight people:

3 large eggs
100gr brown sugar
1 tsp vanilla extract
250gr mascarpone cheese
24 savoiardi biscuits
500ml (1 pint) of coffee
30gr (1 oz) cocoa powder

Make the coffee and let it cool to room temperature.
Separate the yolks from the whites, mix the yolks with the sugar until you get an almost white and bubbly cream (an electric mixer would be of help here, as this would require a lot of elbow grease to do it manually). Put the mascarpone in a bowl and stir it with a wooden spoon for two-three minutes to loosen it, then add it to the egg yolks, one tablespoon at the time, and gently stir until perfectly blended.
In a separate bowl, whip the egg whites until firm (again, an electric mixer would be of help), and gently add them to the egg and mascarpone mix.
Dip the savoiardi biscuits in the coffee and line the bottom of a casserole. Cover with a layer of mascarpone cream, repeat the operation until you get to the top of the casserole, then finish with a layer of cream. Keep it in the fridge for at least five hours before serving and cover with cocoa powder right before slicing it.
